You can fill the burrito with your favorite stuffing. Here is the recipe I used:
2 cups cubed chicken (I used leftover spicy grilled chicken breast)
1 can (15-1/4 oz) whole kernal corn, drained
1 can (14-1/2 oz) diced tomatoes, drained
spinach tortillas
(blue corn tortilla chips, sour cream, cheese cubes (I used pepper jack), tomato or red pepper, shredded cheese (I used Colby))
Prepare the rice according to the package directions in a saucepan. Add the chicken, corn, and tomatoes. Cook through.
Spoon the filling onto a warm tortilla and roll. First fold over two sides, then start rolling from the bottom. Place seam down.
Decorate. I used toothpicks to stick the cheese into the burrito for Frank's neckbolts, and used sour cream as "glue" for the tortilla hair as well as the eyeball. A broken tortilla chip became the nose. Tomato bits became eyes and mouth. Their personalities come to life right before your eyes. No electric shock necessary.
