1-1/2 lb. ground beef
16 oz. chunky salsa
7 oz. sweet corn, drained
2.25 oz. olives, drained
1-1/2 tsp chili powder
1 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese
3 boxes (8.5 oz each) cornbread mix
green bell pepper, chives, roasted red peppers, olive bruschetta
sour cream
In a large skillet, brown the ground beef, drain. Add next 6 ingredients. Stir. Heat for 5 minutes, then remove from heat and add cheese. Stir.
Prepare 1 more box of cornbread and cover the meat mixture.
Place your serving platter upside down over the pan and flip everything over. Slowly start to release the pan.
