This is an easy snack to prepare for those Rice Krispie treats lovers, and I know a few. The hardest part was decorating. The color and flavoring come from Jell-O. The decorations can be about anything you have on hand. I had Jelly Belly's and chocolate chips to try out different button looks. I ran into a few problems with the decorating icing, which I'll explain in more detail later. Once you know the tricks, this would be a fun project to do with the kids.

Looks familiar, right? But this cookie is not anything like the Angel Pecan cookies I made last. Except for the shape and the powdered sugar, of course. This snowball has a very unexpected surprise inside. Ooey-gooey chocolate cookie surrounding a Hershey's chocolate kiss. You could also try a peppermint flavored kiss and I think it would be equally good. Rod loved these. Warning: they are so rich, a couple will do you. I whipped up a batch of these to drop off with my sister-in-law after she rushed to complete a quilt I was giving as a Christmas present. They turned out to be so delicious that I know I will make another batch next week. They are light and would be great with hot chocolate on a cold winter's day. And I have a great occasion coming up next week to do just that. Ingredients: 2 cups all-purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 cup shortening (I used Crisco) 3/4 confectioners' sugar, sifted 1/4 cup firmly packed light brown sugar 1/2 teaspoon vanilla extract 1/2 cup chopped pecans Well, I guess we asked for it. On our trip to Gatlinburg over Thanksgiving, we were half-jokingly saying that we wanted to see a bear. There they are...the three cubs and the mom behind the car supervising. Wow. Just wow! But, as it turned out, the bear family was not the highlight of the trip. But I'm getting ahead of myself, as I often do. Let me back up a moment and tell you have we got to this point. |
I remember the excitement of visiting the public library as a child. The magic and suspense of reading favorites like The Velvet Room and The Secret Garden tugged at my imagination. Biographies of George Washington Carver and Betsy Ross allowed me to see the lives of those who came before me and to appreciate their accomplishments. Poetry collections like my favorite The Tall Book of Poems, which I took with me on sleepovers, introduced me to a range of poetry where I could consider how the placement and rhythm of words affected your mood – sometimes bouncy, other times melancholy. Plus, I really loved the way that book felt in my small hands. My goal in writing children’s books, I think, is an attempt to recreate those feelings, those early years of reading books where everything seemed possible.
I received an M.F.A. in Writing for Children and Young Adults from Hamline University and won the Karen and Philip Cushman Late Bloomer Award from SCBWI. I worked as a Children's Librarian for 20 years and still prefer to read books written for young people. I have two Cavapoo dogs named Prince Albert and Daisy Wu, and a black kitten named Mortimer. I am married and split time between homes with my husband Rod in Dayton, OH and in Cadiz, KY where we enjoy our pontoon boat on Lake Barkley.
