I honestly don't remember who I got this recipe from, but I scribbled it down with an "excellent" jotted at the top and stuck it in my recipe file years ago. Nothing fancy, just a good loaf!
1-1/2 cups Sugar
1-1/2 cups Applesauce (I used about 5 small apples instead)
1 cup Vegetable Oil
3 large Eggs (I used extra large)
2 teaspoons Vanilla
2-1/4 cups all-purpose Flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Salt
3/4 teaspoon Cinnamon
3/4 teaspoon Nutmeg
3/4 teaspoon Cloves
1 cup Raisins
1 cup Walnuts, chopped
Confectioners Sugar
- Heat oven to 350 degrees. Spray two 8-1/2" x 4-1/2" loaf pans with nonstick cooking spray and flour lightly. (I use Pam Baking spray that does both jobs.)
- Whisk sugar, applesauce, oil, eggs and vanilla in a large bowl until smooth. (I used a food processor to chop fresh apples until there weren't any large lumps left. But hey, lumps of apple would work just fine in this recipe as well! Then I eliminated the applesauce.)
- Stir in flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves until blended. Then stir in the raisins and walnuts. (Obviously if you have nut allergies, leave out the walnuts.)
- Pour the batter into the two loaf pans and bake 50-55 minutes until a toothpick inserted in the center comes out clean.
- Cool on a wire rack. After completely cool sprinkle confectioners sugar on top.
