If you enjoy a soft, fudgy dark chocolate cookie mixed with peppermint, this is the cookie for you! My, oh my! These are very rich and pack a punch with flavor. I think Santa will appreciate a tall glass of milk with these.
1-1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder (I used Hershey's)
1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup butter, softened
1/4 cup vegetable oil
1/2 cup packed brown sugar
1/4 granulated sugar
1 egg
1 tsp. vanilla
4 oz. bittersweet chocolate, finely chopped (I used 72% cacao)
Peppermint Patty thin mints (I used York)
Green sprinkles
- Preheat oven to 350 degrees. Line baking sheets with parchment paper. I used silicone baking mats just because they were already out.
- Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
- In a large bowl, beat butter for 30 seconds, then add oil, brown sugar, and granulated sugar until combined.
- Beat in egg and vanilla.
- Beat in flour mixture. The mixture will be thick.
- Add the chopped chocolate. (I used a Pampered Chef chopper to chop mine)
- Drop a tablespoon of dough onto the prepared cookie sheet and flatten slightly.
- Add a thin mint on top. (Also try Andes mints or other brands too.)
- Top another tablespoon of dough on top of thin mint and spread around to cover completely. (The dough is easy to handle at this point.)
- Sprinkle with sprinkles or nonpareils.
- Bake about 10 minutes (just until set - cookie will be very soft)
- Cool for 1 minute before carefully moving cookies to a baking rack to cool completely, where they will firm.
The cookies will harden and become more firm after cooling, though it feels like they are somewhat raw when you pull them out of the oven, all gooey. The chocolate around the mint, as well as the chocolate bits melt nicely into the dough, and then everything melds together after a short cooling period, while remaining soft inside.
Also, I think I would decorate them nicer with maybe two iced leaves and a red hot to form a holly on top. I will say that the sprinkles add a nice crunch to the cookie, so...maybe keep them. So many options!
